Honey Fermented Process
This process starts the same as the honey processed coffee where the coffee cherry's pulp is removed and the mucilage (sticky outer layer) is left intact during drying. Afterwards, the beans are left to ferment inside a bag for 8 days! The bean absorbs almost two times more this honey-like coating resulting in your favourite tropical fruits favors.
